Mojito Shrimp Lettuce Wraps

Ingredients
- 2 lbs large raw shrimp, peeled, deveined, tails off
- 1/4 C olive oil
- 1 C fresh orange juice
- 1/4 C fresh lime juice
- 1/4 C onion, fine chop
- 4 cl garlic, minced
- 1 1/2 t Ancho Chili powder
- 1 1/2 t oregano
- 1 1/2 t ground cumin
- 1/4 C cilantro, minced
- 4 hds butter lettuce
- 1/2 C queso fresco cheese, crumbled
- 2 ea avocado, 1/2-inch cubes
- lime wedges
- cilantro leaves
Options
- Serve with Sauteed Mushrooms and Truffle Chive Fondue
Instructions
- Whisk together the oil, juices, garlic, and spices, then marinate the shrimp in the mixture for 10 minutes.
- Grill the shrimp until done.
- Plate the lettuce leaves curved side up, place three shrimp on each leaf, add a few cubes of avocado, sprinkle with cheese, garnish with cilantro.
- Serve with lime wedges.
